May I ask at what RPM the factory EXUP valve on the 2023 FZ10/MT10 opens?

To be clear, I do not know for sure, and am just tossing in my two bits as there's no better answer.
I'd assume it largely follows the same curve as the electronic throttle valve to allow sufficient exhaust flow. This is because between idle - 6000rpm, the throttle won't open more than ~35% even if you've got the throttle control at WOT, then it quickly opens up through 7000-8000 rpm. *To my knowledge* there isn't a separate map for it, so it'd make sense to have it follow the ETV map.
And for corroborating evidence, I'll point to how the bike suddenly gets MUCH louder as you're passing 7000rpm. Of course, the extra throttle is a factor, but more gas needs more exhaust flow.
