The coolant and oil should be unrelated to the fuel hose popping off. My guess is the oil might just be built up crud on the engine that the fuel washed off. The coolant is a different story though but just regular 50/50 stuff is fine.

I'm in agreement with Willl. The gas and coolant would be two entirely separate issues and any oil could just be residue off the engine.
Your coolant being at the low line is not a big deal, that where I run mine due to the desert heat I deal with out here in SoCal as running it full would cause overflow. The coolant tank is for expansion of coolant, as long as there coolant in there above the low line, your fine.
I'm a little more strict on coolant though. I don't like mixing coolants. If it needs to be topped off and you don't know what it is, just change it. Certain coolants are detrimental when mixed and it's very hard to know what's in a bike as dealers may use whatever they have on hand and color doesn't distinguish different coolant well.
