Ngk shows the regular plugs are pre gapped to Yamaha spec...however a suitable iridium plug comes gapped from NGK different....should I gap to Yamaha spec or to NGK spec?

I would think the gap is set to bike standards not plug standards. I’m sure if I’m wrong someone will say so. I know with vehicles it’s set to the manufacturer standards of the vehicle not who makes the plug as long as it is suitable for the vehicle. I know u are talking about two types of plugs same manufacturer are the both suitable for the bike? Gap is specified in owners manual as well as plug type. Below is for the 2020 MT-10.

There is so much out there to read but most of it is opinion and not fact. Best to go with what the manufacturer recommends or someone who is an expert tuner.
