I looked out for that symtom this past weekends ride as well to a stall at a light . I have noticed a little clutch binding down where the cable housing seems to pinch when it funnels down by the frame where all the cables route. Its bothered me to a point where I bought a new cable luber motion pro.
I did try a change up the routing of it but have not found a better route for it then how it came so far. So just saying fallow the cables and see if they somehow Touch and change linkages even a fractions.
Also check your play in the throttle or twist it should aviously have some play mine has about a quarter of an inch that be right or not .
Just my thoughts after a few beers .

Throttle cable and clutch free play are perfect. It's clearly something to do with the electronic throttle and one of the two switches in the clutch perch.

Ok so I tried it again today and it did go up one bar so slight I really did not notice before ,nothing changed going from neutral to first clutch in until I let clutch out halfway then pulled back in I noticed rpm went up then back down so slightly . I think you could take off with no gas at all in first that I did not try yet .

Ok so I emailed 2WDW and Nate emailed me back with this:
Strange that not everyone's bikes does this though...

So I emailed 2WDW about this a few weeks ago and they responded but I forgot to update this thread. This was the response from Nate:
So if it's normal then why don't other 2WDW-tuned bikes do this?

Thanks for the update. It is interesting that there isn’t more 2WDW tuned bikes doing this. I’d speculate the simple answer is your settings are different from other tunes.

I have a 2wdw tune on mine and it does it also. I thought it was normal as most fuel injected vehicles do this, my 2019 mustang gt does it also, factory tune.

Every time I let out the clutch my engine goes to redline until I stop shifting or hit thick traffic 🤣
