Does anyone know if I can put a 190/50-17 tire on the rear of the fz without harmiing anything and if that would make any noticeable difference in handling?

Yes a 190/50 will fit and not break anything. It will make the bike turn in slightly slower and make the steering feel a little bit heavier.
If you are canyon carving and track riding I'd stick with a 190/55 to keep the rear a little bit higher which will help keep the front end down. If you are just daily riding it then a 190/50 will not cause any issues.

Well I got a set of the angel gt for my CBR but now I'm thinking I'll just put them on the fz and get more track oriented tire for the Cbr. They have similar profile but the Honda has a 190/50 rear vs the fz 190/55. I didn't plan on tracking the Yamaha.

Although I haven't messed with sizes in the FZ10, going from a 180/55 to a 180/60 on my track bike made it noticeably easier to flick in. I would expect the opposite but it wouldn't she a severe detriment for a street bike that's not being ridden hard or being tracked

If you like to ride aggressively, you wouldn't like that tire. The only question is by how much . Having said that, if you're only going to ride it moderately aggressively, you could play with the rear preload, to minimize the squatting effect done by the profile change. But there's no way around the slower steering of a flatter/lower 50 profile, compared to the more triangular/taller 55... but it shouldn't be too drastic. Anyway, if I were you, due to the way you plan to ride the bike, and that you already have the tire on hand, I'd give it a try, and see what happens .
