Hello,
yesterday I went for a test ride on the MT 10, I just loved it, so I'm exchanging my FZ-07 next saturday for it !
I was wondering if it's easy to adjust the height of the clutch pedal, for some reason, I find a bit too high, so I missed a few times the 1st -> 2nd gear shift ...

Very simple. One thing first...there is no clutch pedal. It is a gear shift lever.

Ahah yeah it's true, sorry, don't know why I said "pedal"
So how do I adjust it ?

When you shorten or lengthen the shift rod, it moves the position of the shift lever. Loosen the lock nuts and spin the rod. REMEMBER to tighten the lock nuts after adjusting.
